Gravity does the work at this Chugoku-mountain cellar, built for the wild-blooded Yamasauvignon grape.
Hokkoh Winery began harvesting Yamasauvignon in 2007, and when the crop passed three tons, built a new cellar in 2018 beside the Karashiro-kan hall in Kitahiroshima. The site, on the cool skirts of the Chugoku mountains with wide day-night temperature swings, suits Yamasauvignon and Cabernet Sauvignon, and the winery itself is laid out on a gravity-flow plan — no pumps push the wine. A cider from local apples rounds out the range. Wines are sold online and through regional retailers, with occasional tasting events.
