Two Kyushu transplants cleared abandoned farmland in Niki to found HARBIOSE — ‘harmony’ and ‘symbiosis’ — a wild-yeast, low-sulfite winery.
Kumiko Hattori and her daughter Midori, who relocated from Kyushu, acquired abandoned farmland in Niki in 2018 and cleared it by hand. In 2022 they obtained a brewing license and completed the winery, named HARBIOSE — a coinage of Harmony and Symbiosis — expressing a wish to prosper alongside nature, the local community and friends. Wines are fermented with wild yeast and bottled with minimal added sulfites.
