余市町は北海道の日本海側に突き出た積丹半島の付け根の北緯43度に位置する地域で、漁業と果樹農業が盛んな地。約3ha（栽培面積1.8ha）の自社畑で栽培。山中敦生がドメーヌ・タカヒコの曽我貴彦氏のもとで2年間研修後に独立。
