Pur. opened its vineyard in 2015 on the east-side highlands above the Yoichi River in Niki, at 130 to 150 meters — the highest elevation in town. Chardonnay (45%) and Pinot Noir (35%) anchor a wider planting of several varieties, including Pinot Gris, Cabernet Dorsa, Pinot Meunier and Dornfelder. The winery’s name, French for ‘pure,’ reflects its pursuit of the grapes’ own character, and a bakery-linked winery facility is in planning.
