Takizawa Winery traces back to 2004, when its founder set out to make wine and began clearing about a hectare of south-facing slope in the Tappu district of Mikasa. The vineyard is farmed to be as pesticide-free as possible, and fermentation relies on the natural yeast the grapes themselves carry — an approach built around letting the wine's own vitality come through.
