Winery Yume no Mori, founded in 2016 in Yoichi, Hokkaido, uses stainless steel tanks and aims to keep added sulfites to a minimum, in pursuit of a natural style of wine. It grows seven varieties — Pinot Noir, Pinotage, Chardonnay, Pinot Gris, Pinot Blanc, Sauvignon Blanc, and Gewürztraminer — within the GI Hokkaido-certified region.
