Aperture Farm and Winery began growing grapes in 2011 and opened its own winery in Tomi in August 2022. It makes natural wine fermented with wild yeast and minimal added sulfites, taking over Kyoho vineyards from an aging farmer and experimenting with new winemaking methods.
