Founded in September 2017 in Tomi, Cave Hatano is run by Nobutaka Hatano, who treats grape-growing as an ongoing cycle of hypothesis, experiment and verification — trialing rain covers and reduced pesticide use in pursuit of better fruit. The winery sells with confidence directly to customers it knows personally, handling growing, winemaking and sales itself from start to finish.
