A young Matsumoto estate winery living by 'grass is a friend,' training vines in a V-shaped Lyre trellis.
HASE de KODAWAAR completed its winery in July 2022 and began fermenting that September, on an estate in Matsumoto. Its motto, 'grass is a friend,' guides cover-crop soil management, and vines are trained on a high-density, V-shaped Lyre trellis. Alongside Chardonnay, Merlot and Cabernet Franc wines, the winery also makes cider from Matsumoto-grown apples.
