A sake brewery since the late Edo period, Nishiida also crafts Merows wine from local Niagara grapes, fermented with a flower yeast developed with Tokyo University of Agriculture.
Nishiida Sake Brewery, founded in the late Edo period, also produces Shinshu Local Wine Merows, a handcrafted wine made from locally grown Niagara grapes. Working with Tokyo University of Agriculture, the brewery uses a yeast isolated from vinca (periwinkle) flowers to ferment the wine.
