Toyono Takayama Winery grew out of a satoyama-revival project: its parent, founded in 2020, cleared derelict rice terraces in the hills of Toyono and replanted them with vines. Licensed in March 2024, the estate uses the cool climate at roughly 500 meters and clear spring water to grow and ferment everything on site, releasing its first 2025 vintage from Muscat Bailey A, Sauvignon Blanc, Delaware and Yama Sauvignon. Under the local wine special-zone program, the wines pour at the Auberge Yamagami and at events around the town.
