At 900 meters on Mt. Fuji's slopes, a Bordeaux enology dean helped shape this estate's cool-climate wines.
Fujisan Winery is an estate winery on vineyards roughly 900 meters up in the Asagiri Highlands, within Fuji-Hakone-Izu National Park, making European-variety-focused wines shaped by the cool climate at the foot of Mt. Fuji. It holds estate vineyards in both Fujinomiya and Yamanashi Prefecture, and invited Professor Denis Dubourdieu, dean of Bordeaux University's enology faculty, to advise on winemaking.
