Kanata Winery began operations in Uozu, Toyama in 2023, becoming the first winery in the eastern part of the prefecture. It draws on Uozu's water cycle and climate, which it describes as a world-class terroir, while carrying on the area's roughly 140-year-old tradition of fruit growing. It works in small batches with Chardonnay, Yama Sauvignon, and Shine Muscat.
