98WINEs opened in 2017 in Shioyama, Koshu City, envisioned as a place exploring 'the power that wine holds' and connecting people through it. The winery focuses solely on Koshu (Japan's indigenous white grape) and Muscat Bailey A (a Japanese-bred red), achieving sulfite-free vinification since 2020 through precise cellar management and gravity-flow methods that minimize stress on the grapes. Its site in Fukuori, a former community-hall lot with views of Mt. Fuji, comprises three buildings: an 'iron wing' for brewing, a 'stone wing' for storage, and a 'wood wing' for gathering.
