Cave an

Cave an was founded in 2022 by Masako Anzo, a winemaker formerly responsible for viticulture and winemaking at Marufuji Budoshu. She opened six plots totaling about a hectare in the mountains of Manriki, Yamanashi City, at roughly 400 meters elevation, growing a range of varieties including Koshu, Petit Manseng, Albariño and Tannat. Her aim is balance and elegance suited to Japanese cuisine.
