Domaine Hide, led by Hideo Shibuya, is a red-wine specialist pursuing what it calls 'true Japanese wine.' The winery explores the saignée method and polishes its grapes to a ratio of 50% or more — comparable to daiginjo sake — under a philosophy of brewing naturally, following the moon, amid the nature of the Minami-Alps. It received its fruit wine manufacturing license on July 31, 2015, and produces about 8,000 bottles a year.
