Founded in 1963 by Nikkawa High classmates hoping to drink wine from grapes they grew, still made additive-free with wild yeast.
Higashi Shin Yoshu was founded in 1963 by a group of Hikawa High School alumni who wanted to grow their own grapes, make wine and drink it together. The small winery practices natural winemaking — no added sulfites, unfiltered, wild-yeast fermentation — using an old-fashioned method that skips cold stabilization, so bottles are filled with their tartrate crystals intact. It releases more than 20 different labels each year from Koshu, Muscat Bailey A and Kerner, without seeking vintage-to-vintage consistency, giving each wine its own character.
