Hishiyama Chuo Jozo is a rare survival: a communal wine cellar jointly funded by some fifty farming households in the Hishiyama district of Katsunuma, whose Koshu grapes are brought in and pressed by hand on a wooden basket press, as they have been since the early Showa era. Only the free-run first pressing is fermented, and the pressed skins return to the vineyards as compost — a closed local loop. The house traces its license to the Mitsumori family, granted in the early 1930s. Direct sales and tastings are available; check ahead.
