A new natural winery in Minami-Alps, LA PENSÉE ferments organic Koshu and Muscat Bailey A with wild yeast, naming each cuvée by numbers.
LA PENSÉE received its brewing license in September 2024, becoming a new natural winery in Minami-Alps City. Its founder, 髙橋厚芝, trained for three years at Domaine Hide as part of a local revitalization program before starting the winery. Grapes — Koshu (Japan's indigenous white grape), Muscat Bailey A (a Japanese-bred red) and Gewürztraminer — are organically grown, and the wines are fermented with wild yeast and made without added sulfites. Each cuvée is named with a number rather than a conventional label.
