Seven Cedars Winery takes its name from seven large cedar trees at Kawaguchi Asama Shrine, and began brewing in August 2022 as Fuji-Kawaguchiko's first winery. Built on a philosophy of honoring the growers who tend its grapes, every label states the grower's name and variety. The winery farms four of its own plots — 御印, 霊嶽, 神免 and 二柱 — without herbicides or chemical fertilizers, growing Chardonnay, Sauvignon Blanc, Petit Manseng, Kerner, Pinot Noir and Merlot.
