At 600 meters on the southern slopes of Shosenkyo gorge, Shikishima Jozo hand-farms 14 grape varieties without herbicides to make about 30 wines.
Shikishima Jozo sits at an elevation of 600 meters on the southern foot of the Shosenkyo gorge in Kai City. It obtained its brewing license and began production in 1985, and now makes roughly 30 wines using 100% of its own estate-grown grapes across 14 varieties, farmed without herbicides and with reduced pesticide use, relying on hand labor rather than machinery. The winery also runs vine-tree and barrel-wine ownership programs.
