Toumu Winery, founded in 2004, is the core winery of Katsunuma Wine Village in Koshu City. It is known for wine aged inside the Kamihikawa Dam tunnel, including a bottle-fermented sparkling Koshu stored there at constant temperature for about a year. Its barrel-aged Bijou Noir red — made from a variety developed by the Yamanashi Fruit Tree Experiment Station — won an award at the 2023 Japan Wine Competition.
