Wild-yeast Katsunuma wines from borrowed vineyards — a boutique estate keeping aging farmland alive.
Vineyards Kikushima began with contract-made Koshu and Merlot in 2016, then built its own boutique winery in Katsunuma in 2020. The house works to a philosophy it calls gentle winemaking: no chemical pesticides or insecticides in the vineyard, wild-yeast fermentation in the cellar. Just as important is where the grapes come from — plots borrowed from aging farmers, keeping Katsunuma's vineyard landscape in production. Sales are limited to the first Saturdays of April and November and by appointment, which only adds to the small-estate character.
