La Grande Colline Japon is a natural-wine winery in Okayama run by a winemaker also active in France's Rhône Valley. It uses wild-yeast fermentation and low-intervention winemaking to express the character of the site, working with the Shokoshi grape, a Japanese-bred hybrid red.
