Daisen Winery is an estate winery at the foot of Mount Daisen, growing European varieties on its own highland vineyards in Hoki. It draws on the cool climate of the San'in region to make both white and red wine, with 6.5 hectares of estate vineyard planted mainly to Chardonnay and Merlot, and a target of expanding to 10 hectares by 2025.
